Pasta salad with turkey breast and mandarins
Ingredients
Serves 2
100 g whole wheat pasta (raw weight)
1 pinch of iodised salt for the pasta water
3 tbsp salad dressing (26% fat content)
3 tbsp lemon juice
1 pinch of iodised salt
1 pinch of freshly ground pepper
90 ml vegetable stock
2 large bunches of radishes
6 gherkins
3 slices of smoked turkey breast
3 mandarins
1 bunch of fine herbs
40 g cashews
Preparation
Bring the pasta to the boil in salted water, following the on-pack instructions, and then let it cool. Combine the salad dressing, lemon juice, iodised salt, pepper, and vegetable stock.
Chop the gherkins and radishes into small pieces and stir into the sauce. Dice the turkey breast and the peeled mandarins, and chop the fine herbs. Add this mixture and the pasta to the salad dressing and let it marinate. Sprinkle with cashews.
Tip: Cashews will release their full aroma if briefly toasted in a pan without any added fat. If radishes are unavailable, they can be substituted with blanched broccoli or fresh carrots. At the end of summer, mandarins can be swapped for freshly picked apples.
Turkey breast can be replaced with chicken breast or cooked ham.
Extra tip*
If you need an extra energy boost, a plain yoghurt with toasted flakes and hazelnuts can serve as a snack.
